I was going to cook this evening, but I didn’t. I had an eye appointment that went long, so I didn’t have time to cook. I’m going to do it tomorrow. I swear I am.
I’ll be cooking Roast Filet of Beef with Onion Butter. I don’t know anything about beef, but I’m cooking it because we have some filets (I think that’s what they are) in the refrigerator. Ernie took them out of the freezer in the garage and put them in the fridge to thaw.
Ernie bought the beef. He bought lots of beef from a guy in a truck – Omaha Steaks, to be precise. Now Ernie knows that I’m not a big meat eater, so I don’t quite understand why he bought all of these steaks. Anyway, he took these out of the freezer, and I decided that I’d be the one to cook them.
The recipe calls for onion butter, but it doesn’t tell you exactly what you’re supposed to do with it after you’ve prepared it. Maybe I should drizzle it on the roasted filets.
I’m also going to do something simple with Yukon Gold potatoes. Here’s the recipe. I’ll also add a vegetable, probably something frozen that comes in it ‘s own sauce. I’m not Martha Stewart after all.
Hopefully, I’ll actually cook this stuff tomorrow. If I do, I will post pictures. Here are the potatoes I bought today.
